peanut butter m&m chocolate chunk cookies

If you follow me on Instagram, then you probably saw that I made cookies over the weekend with red, white, and blue M&Ms. And if you guessed that those cookies were going to end up on the blog - then you are correct!

These are super easy to whip up {you don't need a stand or hand mixer!} and you can use any kind of M&M variety really. Either way, I promise you'll love them!

Peanut Butter M&M Chocolate Chunk Cookies

Ingredients:
3/4 cup unsalted butter, melted and cooled
2 1/4 cups flour
1 tsp baking soda
1/2 tsp salt
1/2 cup light brown sugar
1/4 cup dark brown sugar
1/2 cup granulated sugar
1 large egg
1 egg yolk
2 tsp vanilla extract
3/4 cup semi-sweet chocolate chunks
1/2 cup peanut butter M&Ms, plus extra for topping!

Directions:
1. Whisk the flour, baking soda, and salt in a large bowl. Then, set aside.
2. In another bowl, whisk together the melted butter, light brown sugar, dark brown sugar, and granulated sugar until there aren't any lumps. Add in the egg and egg yolk. Then, whisk in the vanilla extract.
3. Pour the wet ingredients into the dry ingredients and mix together with a rubber spatula.
4. Fold in the chocolate chunks and M&Ms. Then, cover the dough and chill for a minimum of three hours.
5. Preheat the oven to 325°F. While it's preheating, let the cookie dough soften at room temperature for ten minutes. Line two large baking sheets with parchment paper.
6. Roll cookie dough balls, about 1 1/2 - 2 tbsp each. Make sure that they are taller than they are wide, then slightly press down on the ball when you place them on the cookie sheets.
7. Bake the cookies for 11-12 minutes. They will look slightly underbred, but they'll continue to bake on the cookie sheets. Place a few extra M&Ms on top of the cookies while they're still hot {really right when you take them out of the oven}.
8. Let the cookies cool for 8 minutes on the cookie sheets before moving to a wire rack to cool completely.
