Ice Cream Filled Cupcakes // A Style Caddy

Cupcakes are one of my favorite desserts to eat and bake. The only problem with baking anything in the summer is that it's just so darn hot! What better way to cool down than with a cupcake filled with ice cream? Yes, that's right. Cold, delicious, creamy ice cream right in the center of a soft cake. This will be come your new favorite summer treat, I promise!

And what makes it all better is that this recipe is so incredibly easy because you can use whatever cake recipe you'd like, even a boxed mix.

Ingredients:
Your favorite cupcake recipe {I used this Devil's Food Cake recipe from My Baking Addiction}
Ice cream

Directions:
1. The most important part of this recipe is to make sure that all of the cupcakes are completely cooled. I waited a good half hour before even attempting to fill them.
2. Cut a cone shape with a paring knife from the center of the cupcakes. Then, cut the triangular bottom from this piece so that you can top the cupcake once filled.
3. Working with two or three cupcakes at a time, take a tablespoon of ice cream {I used Ben & Jerry's Coffee Coffee, Buzz Buzz} and fill the center of the cupcake. Top with the circular round to cover the hole.
4. Transfer the filled cupcakes to the freezer while filling the rest.
5. This step is optional, but you can top the cupcakes with your favorite frosting or whipped cream.
6. All that's left to do is take a bite and ENJOY!
